Bean salad (insalata di fagioli)

Hello, my lovely readers!

It’s been a while, I’ve been super busy. But I’m back in action.┬áToday I want to share with you a quick vegetarian salad recipe I’ve been making for the past week. I love salads because they are quick, filling and you can easily substitute ingredients.

Prep time: 5-10 mins


  • green salad
  • finely chopped cabbage
  • 10 green olives
  • 1/2 tomato
  • chickpeas
  • kidney beans
  • the dressing of your choice

I layer each ingredient in the order written above. I would usually dress it with a dollop of Greek yogurt but I ran out so I substituted it with pesto. And because I love spice I always add black pepper, hot sauce and not forgetting to squeeze a bit of lemon.
